Parboiled rice refers to rice that has gone through the process of parboiling and removing the bran. Parboiled rice is a Thai rice product that is processed from brown rice and white rice grains that must contain more than 25% amylose. Amylose is a complex compound formed by joining together a large number of glucoses in a long linear chain. Rice grains contain approximately 20-30% amylose.
